Banana Bread Oatmeal
This is a delicious way to eat your healthy, omega 3, fiber packed oatmeal breakfast and it smells and tastes just like banana bread. yum.
- 1/2 cup rolled *oats (or steel cut)
- 1 tbsp ground flax or chia seeds
- 1-2 tbsp chopped walnuts
- 1/2 banana, sliced
- 2 dates, chopped
- 1 tbsp maple syrup- optional
- 1 tsp cinnamon
- splash of walnut oil – optional
Bring 1 cup of salted water to a boil. Add the oats, stir, and let boil until the mixture begins to thicken (about 5-10 minutes). Turn heat off, add all other ingredients and put in bowl. Remove from heat and serve with a splash of walnut oil and/or almond or rice milk if desired.
*some people who have celiac disease and/or who are intolerant to gluten can still handle oats. There are now many gluten free varieties that you may choose to experiment with, but be sure not to ‘overdue’ oats. (once every 4 days is a good guideline – rotating grains will ensure we don’t develop sensitivities to foods)
