Chocolate Chip Cookies (free of gluten, dairy, refined sugar and nuts of course!)
If you are going to eat cookies make your own with ingredients you trust instead of buying cookies that are filled with transfats and refined sugar. 2 of President’s Choice Decadent Chocolate chip cookies have 5 grams of saturated fat, 21 g carbs, 12 g of sugar and only 1 g fiber.
This cookie recipe is perfect for school/work lunches because the cookies won’t raise blood sugar levels too quickly (<5 g sugar), and the coconut oil, high fiber and higher protein flour help to provide sustained energy.
These take about 30 minutes to make…the time it takes to swing by a Tim Hortons drive through for your morning coffee and bagel. 🙂
Ingredients:
- 1/2 coconut oil, melted
- 1/2 cup coconut sugar
- 1/4 cup agave or maple syrup
- 1/2 cup water
- 2 tsp vanilla
- 1 cup gluten free flour blend
- 1 cup garbanzo flour (or just use 2 cups of gluten free blend)
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- Handful Enjoy Life Chocolate Chips (or nuts or raisons or whatever you like)
Mix wet ingedients together. Add dry ingredients and mix well. Bake at 350 for about 15-20 minutes.

It’s all about teaching ‘moderation’.
Restricting yourself 100 percent from certain foods or by labeling food ‘good’ or ‘bad’ sends the wronge message. A feeling of deprivation may lead to ‘binging’ on the very foods we have been trying to avoid! It is important that we teach our kids about moderation and about how the food we eat impacts our bodies and brains so that they too can make healthier choices. Whenever my kids have a commercial sweet, I always ask them how they feel right after and then the day after that. Just the other morning my son had digestive issues and said to me, “I think that the Gummies I had did this to me!” They are learning! p.s. do this for yourself also.
