Chocolate Peanut Butter Ice Cream

When you can’t have dairy, it’s so tough to watch other’s on hot summer days devouring ice cream without a worry.  For those ice cream fans out there who cannot digest the protein’s or lactose in cow milk and/or are choosing to avoid dairy for health reasons, here is a creamy and delicious version of ice cream to enjoy that you can feel good about eating.  My sister’s favourite flavour at Baskin and Robin’s used to be chocolate peanut butter…so this one is for her!

  • 4 bananas sliced and then frozen (in freezer bag)
  • 3 tbsp peanut butter
  • 2 tbsp cocoa powder
  • 1 tsp vanilla


Blend frozen bananas in food processor or vitamix until creamy.  Add peanut butter, vanilla and cocoa powder.  Blend until smooth.  You can eat it as is…slightly soft or you can put it in the freezer to firm up.
