Coconut Raspberry Dairy Free Ice Cream

One of the foods I felt bad about not allowing my kids to eat was ice cream. (due to their intolerances)  Ice cream and kids cannot be separated!  Who doesn’t have a great memory of a nice cold ice cream cone on a hot summer day with family and friends?  Well, this memory can be created and they won’t even realize how much healtier this version is!

Ingredients:

  • 1 can light coconut milk
  • 2 raw eggs (optional)
  • 2 tbsp coconut sugar (low gi sugar) or any sugar you like
  • 1 tbsp vanilla
  • 1 tray icecubes
  • 1/2-1 cup raspberries

Directions:

Blend coconut milk, eggs, sugar and vanilla in Vitamix or blender until smooth.  Add raspberries and blend quickly so that they break up a little and colour the mixture just slightly.  This version is best eaten right away!

    Very refreshing! I’m so glad to have a simple alternative to ice cream that is vegan.
