Orange Almond Biscotti

IMG_4814This was one of my all time favourite treats before I began eating gluten free.  This gluten free version is fantastic!  This version is made of healthier ingredients, not the sugar and wheat loaded ones you would purchase at the coffee shop.  Add cranberries or chocolate chips for a more festive version.

  • 1/2 cup ground almonds
  • 1 1/2 cups brown rice flour
  • 1/2 cup tapioca flour
  • 1/4 cup coconut sugar
  • 1/4 cup honey
  • 1/4 tsp each of baking powder and baking soda
  • 1 1/2 tbsp orange zest
  • 2 eggs
  • dark chocolate chips and coconut oil (for drizzling)

Blend almonds in food processor.  Mix all dry ingredients into the almonds.  Add all other ingredients and mix until it begins forming a stiff ball.  Remove and then scoop dough onto a geased tray, shaping the dough into a log shape.  (flatten slightly)

Bake at 350 for 25 minutes.  Remove, cut into slices and then lay flat and put back into the oven to bake for 10 more minutes.  Turn the oven off and then leave them in the oven for an hour until they dry out a little.

If you are experiencing issues with digestion or bloating, avoid using starchy flours  or gums like tapioca flour, potato flour or xanthan gums.  You might think you are making a good choice going gluten free, but many commercial gluten free products are loaded with these starchy flours that could cause more issues for those with compromised digestive systems.  As a holistic nutritionist, my recommendation would be to make your own baked goods or read labels carefully!

In this recipe, simply use more rice flour and omit the tapioca flour for a cleaner version.
