Raw Chocolate Raspberry Cheesecake

So good and guilt-free to boot! If you like chocolate and are looking for a healthier alternative that is gluten free and dairy free, this is it.
Crust:
- 1 cup shredded coconut (unsweetened) or pecans or any nut you like
- 1 cup walnuts
- 1/2 cup dates
- pinch sea salt
- pinch cayenne pepper
Filling:
- 2 cups cashews (soaked overnight)
- 1 cup virgin coconut oil
- 1 cup almond milk or milk alernative
- 1/2 cup cocoa powder
- 1/2 cup agave nector (or more depending on preference)
- 2 tbsp lemon juice
- 2 tsp vanilla
Directions:
Blend all crust ingredients in a blender starting with the nuts. The mixture should stick together when pressed. Press this in the bottom of a 7 inch springform pan. Put in the freezer while you make the filling.
Blend all ingredients in a blender until smooth. Begin with cashews. Pour into crust and put it into the fridge to set. Top with raspberries. Enjoy!
