Rice Crispy Treats

Makes 9 -12 Squares
- Rice Crispies cereal
- 1 ¾ cups brown rice syrup
- 3/4 cup almond butter or peanut butter (preferably unsweetened and unsalted)
- 1/2 cup raisins or non-dairy chocolate chips or carob chips
Heat the syrup in a saucepan over low heat. When the rice syrup liquefies, add the almond butter and stir until well combined. Pour into large mixing bowl and gradually add rice crispies cereal until desired consistency (less rice crispies if you like gooey squares; more rice crispies if you like firmer squares). Mix well with a wooden spoon.
Once thoroughly mixed and cooled to room temperature, stir in raisins or chocolate chips. Make sure the mixture is cool, or you will end up with melted chocolate instead of chocolate chips in your treats!
Turn mixture into a 8” x 8” or 9” x 13” pan. Wet your wooden spoon lightly and press the mixture evenly into the pan. Let cool for 1 hour before cutting into squares or bars. Enjoy!
